Sugar production is a Han Chinese traditional handicrafts, producers pick a burden, one side is heating stoves, the other side is sugar and tools. It’s said that from Song Dynasty already have had sugar handicrafts.
Today, however, I want introduce Japanese sugar craft. Edo period it can be seen everywhere in the street people trafficking sugar crafts. This process through generations of oral teaching by example has spread.
The sugar is heated to 90 ℃, then it will become soft sugar, sugar will be shaping cured after a few minutes. So, in a short time craftspeople need hold sugar in one hand and scissors in another hand and a fixed fast operation. This process is different with the carving, it does not waste a trace of raw materials.
These not only refined sugar and delicious, but a bit too pretty, like one piece of art, too pretty to eat!
