In 2008, South Korean central bank conducted a statistics in all of the world’s 41 countries for those traditional stores which has been existing for more than a century. There are 5586 traditional stores have been running for more than 200 years old. And 3146 of them are in Japan.
Really I have to say japanese’s effort on traditional heritage deserve all of the respect. There are to many craftsmen in Japan, one life just do one thing. Some people make sushi in their lifetime like Sushi God Jiro Ono .Some people calcined knife all their life like Japanese sword Osaka Gassan. Some people achieve the ultimate when they take over the business from the last generations like Yamamoto family.
Yamamoto family has been doing soy sauce for five generations already. Now more and more soy sauce producers began to use modern machinery to make soy sauce.But Yamado family still insist on using cask brewing process. In order to be able to make the best soy sauce and retain the brewing technology, soy sauce barrel is essential. But now less and less of the old craftsman left to be able to produce soy sauce barrel, no young men willing to heritage such production process. But the fixth generation Yasuo Yamamoto dedicated to study how to make cask from artisans just want make the best soy sauce in old traditional way.
In the current world, lifetime focus on doing one thing is very unique and precious. Give all my respects to all of those craftsmen. Thank you for you all still adhere to do what you are doing. That’s also what I should learn from you.
